If you plan on using an avocado in meal preparation today, leave it unrefrigerated. If you intend to delay use of a ripe avocado for several days, then it is best to keep it refrigerated, but no colder than 40°F. Purchasing an avocado in “hard” or “green” condition means that the avocado will normally take 3 to 5 days to ripen unrefrigerated. If you’re buying several at a time, store some of your hard green avocados for up to 10 days in your refrigerator to delay ripening.
